Adéle is the founder and director of the multidisciplinary design firm Foolscap Studio, a purposefully small-medium size studio made up of diverse individuals, working across a broad range of creative and strategically-led projects.
Foolscap moves seamlessly between interior, architectural, product, graphic and identity development for clients operating in the hospitality, retail, workplace and public space sectors.
Foolscap aims to create spaces and experiences that contribute to city culture while also being healthier, more productive and more sustainable (in every sense of the word).
Adéle sees every project as an adventure in pushing the boundaries of what design can do for people, and as a result Foolscap employ wit, play and opportunity to create outcomes that feel warm and ‘lived in’, before anyone has even occupied the finished space.

Domaine Chandon
In-depth rejuvenation of a Yarra Valley icon. A new-world outpost of the global Moët Hennessy sparkling wine house, a subsidiary of LVMH, Domaine Chandon has been making superlative méthode traditionelle sparkling wine in the crisp, verdant Yarra Valley for over thirty years.
Our brief was to overhaul the site and create a new brand-immersion across bar, dining, tasting and retail spaces. Inspired by the uplifting ritual of spontaneously popping the cork, we’ve celebrated heritage in a fresh affair fit for the 21st century. Views of the incredible environs were a natural starting point for considering the visitor experience, the range of which will traverse loyalists and locals, diehard food and wine thrill-seekers, ‘gramming millennials and new discoverers alike. Fearless application of colour reflects the extraordinary tonal shifts in the landscape throughout the seasons.
The diversity of experiences possible in the venue required due consideration be given to encouragement of individual Chandon ‘moments’, while retaining cohesiveness across all spaces. A clear visual narrative was key. -
ODE Dermatology
Traditional dermatology can feel rather clinical. Establishing her very first independent clinic, medical dermatologist, Dr Shyamalar Gunatheesan, engaged our studio to create ODE – a destination which draws on the tenets of high-end hospitality to offer a holistic wellness experience. Our brief was for a clinic that didn’t feel like a sterile environment, rather more like a hotel. The result: a fit-out with an emphasis on inner beauty, and a departure from the traditional notion of healthcare provision.
Working closely with the client during early branding sessions, we delivered a concept that pays homage to the self. Named ODE, and framed by the idea of a ‘quiet ode to one’s self’, the design acknowledges the importance of taking time out for ourselves. Our design concept drew on the ideas of ‘Duality as Unity’, blending and balancing human with high-tech, as well as ‘Inside Out’, delving deep into the transformative qualities of skincare and health. -
ANZ Centre
Transformed into a thriving hub of activity and interaction, ANZ Open House Level 10 invites the ANZ community of staff and clientele to collectively enjoy and co-own a set of exciting and inclusive amenities.
A culture of hospitality, conviviality and connectivity lives at the heart of this project which sees a myriad of zones reimagined to offer visitors a warm welcome, while catering to numerous needs at executive, staff and client levels. Heightening the beauty and celebration of these spaces are a set of bespoke furniture commissions and environmentally conscious design insertions, each a point of pride and source of rich storytelling for the client. -
Noma Australia
All eyes were on Rene Redzepi and his team as the world’s best restaurant relocated to Sydney’s new Barangaroo precinct. Redzepi’s brief for the temporary project expressed the desire for something ‘uniquely Australian’, an interior that reflected Noma’s intent to source ingredients from coastal and surrounding regions.
Foolscap Studio worked with the Lendlease design team and Noma in Copenhagen to better understand the experience design, service culture, workflow and exacting functional requirements of the front of house, kitchens, R&D labs, and back of house operations. Foolscap delivered the scheme through to construction and also developed additional items to produce a holistic experience across all touchpoints, including signage, print materials, table items and uniforms.
Reflecting Noma’s research-led approach to food innovation and sourcing of progressive ingredients, the design team created a narrative that interwove this approach with a distinct Australian identity. The design concept encapsulated both the ancient and contemporary Australian condition and the elemental quality of the vast Australian landscape – rugged oxidised earth, sweeping coastlines, open sky, horizon and the regeneration of native bushland through fire.
